Polenta & Almond Marmalade Cake


This cake is moist, gluten free and if you omit cream cheese frosting, it is also dairy free. It can be frozen so making a double measure and freezing one cake makes sense as it is a little time consuming process, but really worth it.


2 Oranges
1 generous tablespoon of Marmalade
6 egg
200 g sugar
125 g polenta
125 g ground almonds
2 tbsp finely chopped rosemary
1 tbsp baking powder
3 tbsp olive oil
grated zest of one lemon
2 tsp of natural vanilla extract

For the syrup:
200 g sugar
400 mil orange juice
1 small orange
